I Have a MIDI Fighter and an Ipad I would love to be able to use with Serato DJ in combination with my DDJ-SX. Can I use Serato Itch or Serato Scratch mappings or do I have to wait for someone to come out with Serato DJ mappings?

why not just map it how you'd like? In SSL it has native support, don't think it has in SDJ. I would just map it, Serato mapping is extremely straight fwd.
