There's a few threads around about companies that will do custom controllers, but they charge a good amount of $$s best bet imo is to build it yourself. Check the diy section, there are A LOT of people here that have made controllers and put up build logs.

If your going to get a company to build it you might as well just buy a regular controller from the shop, as it will take away all the fun and huge amount of customisation available to you by going down the DIY route.
If your looking for something easy for a beginner look into the UMC32 from Hale Micro. No programming required, cheap and very reliable.
