dubstep - kick on 1, snare on 3 (usually a couple more kicks in there for flavor, but almost always one of them is on 1). hi-hats add the swing 2 step feel, usually with intricate 16th note/8th note patterns. it's hard to explain, but you want to make it have that "shuffle" from side to side if you know what i mean.
dnb - most copy the "amen break" sample: 2 8th note kicks starting on 1, snare on 2 & 4, with another kick on the upbeat of 3 right before the second snare hit. hi-hats are interspersed and can really do about anything i feel, usually are in 16th note patterns though, and give a sort of drive to the beat.
