Pressure sensitive resistors as inputs on UMC32m (usb midi convertor)

Does anyone reckon this will work?

I have the hale micro UMC32m

The umc32m takes inputs and converts to midi over USB

I was looking to get/make some drum pads on some of the inputs.

came across this instructable:
http://www.instructables.com/id/Electronic-Drum-Pad/
but this uses a piezo, which cant be used as an input on UMC

I then came across these pressure sensitive resistors:
http://www.sparkfun.com/products/9376

Would they work in place of the piezo in that instructable and work with the UMC?

ps doesnt look like the guy who makes the UMC is making anymore...
