Can anyone tell me, or direct me to where i can find information on copyright laws and podcasting? If I want to throw together some tasty mixes, put them into a podcast and post it, am i breaking the law?

Probably. It's a gray area that you will find little relevant information on. There's millions of podcast out there, if by some chance a record label finds yours and doesn't like it then they'll more than likely just ask you to remove it.
