Could I take a USB HID computer keyboard, and use the USB HID device inside to connect pots/faders/buttons to? Then use MJOY to convert the HID messages to Midi?

you will only be able to replace the buttons on the keyboard with other buttons.
I use gamepads with analog joysticks. Each analog jopystick can have 2 pots connected; making a total of 4 pots per gamepad. You can connect two gamepads to a WIN PC.
Alternatively, flight joysticks can have up to 6 axis, and you can always fool around with racing controllers.
