iPad is a little more popular for gig use just based on sie. TouchOSC seems to be the standard, but since Lemur was just released for iPad that may change.

ipod is way too small to be useful
Ipad: touchosc has some great maps for traktor and is a little easier to set up than lemur. I'm sure there will be some good lemur maps coming out soon.
If you use Ableton you can't really beat Touchable on the iPad. I'm still not sold on Lemur/mu yet, Touchable is a lot cleaner and absolutely zero hassle to set up and is a much more elegant of a solution in my opinion for most people unless you really want to tweak it and add custom modules.
i bought na iPad this christmas and use with touchOSC e it work ver very nice, the ipod & iphone is to small to use.
ipad + touchOSC + osculator is very esay to setup btw.

There are some useful TouchOSC templates for i-devices over at digitaldjtools.net. Notably the 'dicey' template for ipod/iphone, which emulates a dicer setup (not sure if it emulates two dicers or one). He also has some really fun ones for ipad.
