the first sound you will hear is most likely the beginning of a bar, the first beat. Even if it's not a real "beat" since it's not a drum sound.
But if you're learning, get some minimal tracks or something that has a loud and distinct beat going.
I learned beatmatching on "Pyramid" from Lazy Rich
PS : and BPM stands for "Beats Per Minute". So you can't say "what's the first BPM of this song".

A lot of stuff will start with a kick.
I imagine that you're referring to the stuff that doesn't?
It's just a matter of practice. It's something that I'm working on myself, just getting the phrasing right. Most of the times with a start of a tune, I can get it fairly good by ear, but some songs have a weird beginning and it just takes a couple tries to get familiar with it.
That's how I go about it anyhow.
