Looks like the 2010 Macbook is compatible with the same drive enclosure as the MBP:

Find one of those that's less overpriced.

in your opinion would it be best to upgrade to a macbook pro ( newest with all the stock crap ) , or go with a 960GB Crucial M500 2.5-inch SATA 6Gb/s 9.5mm SSD , 16.0GB (8.0GB + 8.0GB Kit) ram , and in the optic drive 480GB Crucial M500 2.5-inch SATA 6Gb/s 9.5mm SSD. all in a late 2010 macbook?

Unless you actually need that much storage+ when you are on the road I'd go with 2 x Smaller SSD's in a new (refurb) Macbook Pro (256gb each) and then use a Mirrored Raid external for your bog standard bulk storage and backups.

What are you actually going to be doing on your laptop that warrants so much ultra fast storage ?
