the smartest thing to do when getting a new pc. is to remove the hdd and replace with another. Do OS install yourself from scratch. That way, you have org. hdd untouched to put back into pc when selling in a couple of years :-)
My old Viao has a genuine Win 7 Product Key.
Could I use that on the Envy if I were to install 7 on it?

yes, it can work. But im not sure if it will work in every case
you would need to change/disable some things in bios setup menu on win 8 pc before putting win 7 on ( make bios settings the same on new pc as old ) . like disabel uefi and enable legacy mode maybe ?
the easiest way is if you have a new hdd.
clone win 7 hdd from old pc to new hdd.
put new hdd ( with old win 7 install ) into new win 8 pc.
start up new pc with old OS system. Maybe you will need to make pc bootable with win 7 repair cd.
Clean old drivers. install new ones.... voila
have done this 2 times before. But is is not a thing to do for everyone.

It takes 5 minutes to make it behave like 7, and you dont need to install a start menu replacer if you dont want.
Just uninstall all of the Metro apps through PC settings, and then with the exception of the start screen, programs and windows should behave almost the same.
8 is actually a pretty good improvement over 7.
Get a techy friend to do it. This sounds like it stresses you out, and it should only take about two hours max if you are organised.
Making a usb win8 boot is so trivial I cant understand why you are having difficulties. Seriously hand the job over to someone who enjoys this, and get on with your life.
