If it was packed, they’re doing alright on the financial side… Do you bring in any friends? If the answer is yes, then you’re doing your part. In all seriousness, I wouldn’t do another night without pay. Tell them what you want, $75-100 should be fitting in my opinion. If they agree, do the night and see how they are when it comes to paying you.. If you have to chase them around for an extra hour after the place shuts down trying to collect your dues, then you’re going to want to get something in writing seeing as your buddies are now toying with you, assuming you’re gullible, etc.
That’s how I would do it personally.

Something is EXTREMELY wrong with this picture then if everyone is working for free. Someone is making big money if the place is packed and everyone else is being taken for a fool IMHO.

well myself, the owner, nor the bartenders take pay because it needs so much reno’s, were all just wanting something different in our town that works, usually in our town the summer months are the dead months here, so if were packing it on saturdays its not too bad, and there only allowed to be open til midnight because they dont have the licence that allows them to be open til 3, thats why its hard on them id think, doesnt get bussy until 10 - 1030 ish, and in that time people have 3 drinks maybe til closing?, and their max cap is like 100 inside , 50-75 outside, kind a sucks for the meantime til they get their licence

Sounds more like a hobby than a business

Just make sure when there is a cashflow that you are not the last person to get on the payroll.

The bartenders are making tips for sure at least,
The owner has the profits and a tangible asset essentially being built for free.
