How to record sets using iPad ?

Is all that’s required to do this a USB camera adapter for the ipad and then one of these

AC-1USB Citronic Audio Capture Device Soundcard Sound

Would you then be able to record your sets using apps such as garage band?
Are there better recording apps?

You can get dedicated recording devices for the iPad, like the Focusrite iTrack Solo.
